This cheesy mashed potatoes recipe is the ultimate in comfort food.
Get comfortable and get a bowl for some
For the mashed potatoes you will need:
4 large potatoes
1/2 cup (120 ml) milk
1/4 cup (60g) of butter (1/2 a stick)
1/4 tsp (2 g) salt (optional)

Cut the potatoes up into cubes.
Place the potatoes into water and bring to a boil for 30 minutes. If they are not soft enough that you can mash them with a fork, continue to boil until they are.
Remove from heat and drain.

Once the potatoes are soft enough, mash them. They are very hot so be mindful not to mash to vigorously and send some flying.
Add 1/2 cup (120 ml) of milk, salt and 1/2 (120 g) stick of butter now.
I like to mash them by hand because it leaves lumps. I love mashed potatoed with lumps! If you are severely anti-lump, get out the mixer that will whip them up real nice.
Cheese sauce:
1 cup (240 g) velvetta
1/4 cup (60 ml) milk
1/2 stick (120 g) butter (1/4 cup)
Combine and melt on low heat.

Once the cheese sauce is melted pour about 1/2 a cup over the potatoes.
Fold cheese into potatoes. Do not stir.
Masterful Mash, potatoes just the way a hobbit loves them.
