Spiced Potatoes

Other Lord of the Rings recipes you might enjoy

It's been awhile but lets stop by the Shire and see what the Hobbits have cooking.

You will need 5 potatoes. More or less depending on haw many you are feeding.

Slice them up into bite size cubes.

Add 2 tablespoons (30 g) of olive oil to a baking dish and spread around to cover the bottom.
Add the cubed taters.

I used the coating recipe from the Spicy Hot Talbuk post.

I took out cumin and mustard and added ginger and nutmeg.
Yes, I did mean nutmeg and ginger.....its not just for pies in my world.
Add to bag and shake, shake, shake.

Bake at 350 degrees F (176 degrees C) for 90 minutes. (hour and a half) Until they are soft and golden brown.
To cut down on baking time you can microwave the potatoes for 5 minutes.

  3. If you microwave them for 5 minutes, as you suggest, just how much baking time do you cut down?

  4. When I did it, I cut an hour off the time. After 5 minutes of microwaving them they were pretty soft. I just had to season and brown them.

  6. Since anything I make during the week doesn't start until I get home from work, I need recipes that don't include 90 minutes of bake time.

  7. I understand that! I hesitate to give you exact directions because I don't know where you live, altitude or any other environmental conditions that could make my directions wrong. Microwave them till you can spear a fork through them, then bake in oven till browned.
