You will need:
(Ignore the lemon juice, I thought the recipe called for baking powder not baking soda.)
Cake:
1 stick (1/2 c) butter, softened
1 cup white sugar
1 egg
2 cups all-purpose flour
5 tablespoons unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
Have a wonderful time at Lunar Festival!
Filling:
3/4 cup butter, softened
3/4 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 tablespoon milk
Preheat oven to 375 degrees F (190 degrees C).
Cream butter, sugar and egg in bowl.
In a separate bowl, mix together flour, cocoa, soda, and salt.
Add to butter mixture alternately with milk and teaspoon vanilla, mixing well after each addition.
Drop by teaspoonfuls onto cookie sheets.
Bake for 10 minutes.
Remove to wire rack to cook completely. Here is a photo of what the bottoms look like. Chocolate cookies are a bugger to tell if they are done. You have to watch the top, when it looks dry, it is done.
To Make Filling:
Cream 3/4 cup margarine and 3/4 cup confectioners' sugar in bowl until light and fluffy.
Blend in 1/4 teaspoon vanilla and 1 tablespoon milk.
Spread on half the cooled cookies; top with remaining cookies. Keep in an air tight container.
Yum!
