You will need:
(I forgot to add the bag of frozen veggies and the 2 cups of rice to the photo below. So sorry.)
1/2 of a green pepper
1 can black beans
1 c muchrooms
1 c baby carrots
6 cups beef, chicken or vegetable broth
1 (14.5 ounce) can peeled and diced tomatoes with juice
2 c rice
1 (16 ounce) bag of frozen mixed veggies
salt and pepper to taste
Cut up the vegetables into bite size pieces.
I used a beef stock base.
(I made a beef stew a few weeks ago and I saved and froze the broth that was leftover after everyone ate the beef, potatoes and vegetables. I am so glad I did, it saved me from buying or making more stock.)
I put everything in a crockpot and let it simmer all day.
If you don't want to use a crock pot, here are directions for stovetop.
Add your choice of broth and bring to a boil.
Add carrots, celery, green peppers and beans.
Boil for 10 minutes, then add.
Mushrooms, tomatoes, bag of mixed vegetables and rice.
Boil for 10 more minutes until rice in tender.
Set to low heat until everything is soft.
Taste test to make sure everything is tender enough for you, be careful!

Thank you @davParrish. I admit I do take some creative liberties with the recipes here. I know if I handed my husband a bowl of leeks and cabbage I'd get "that look". You know the look. The "Are you handing this to me because you want me to throw it away for you? I hope." So I added ingredients I knew would get eaten while sticking with the spirit of the game.ReplyDelete
