When I found this recipe for a tuber, I knew I had to bring it to life.
Use butter or olive oil on the bottom of a baking dish. Place sliced tubers flat side down. Brush oil lightly over tops of potatoes.
Season with garlic, onion, sea salt, cayenne pepper and cumin.
Bake for 30 minutes at 375 degrees F. (190 degrees C)
It reminds me of a twice baked potato is taste and appearance. Add a spoonful of sour cream or slice of cheese.
Yum!
Goes well with Stormchops, Broiled Dragon or Crocolisk Au Gratin.

ReplyDeleteI had to substitute the cumin and cayenne for paprika and splash of hot sauce. It smells heavenly. I can't wait to eat this meal It can't cook fast enough. :D
ReplyDeleteI made these up, but it took about 45 minutes for the potato to cook all the way through. They were super tasty though. I looooved them.
