Nommi ~ Star Wars The Old Republic


 This popular Gungan candy comes from the word for nectar. 

I especially like this homemade candy not just because it is easy to make but because there are no added dyes, preservatives or anything other then fruit and sugar.



You will need:


4 orange peels, cut into 1/4 inch strips
1 cups sugar
1 cup water
1/3 cup sugar for tossing
You can use any mix of fruit like grapefruit, limes, oranges or lemons.




Cut the fruit peels into thin strips.




Place orange peel in large saucepan and cover with water. 
They will float to the top just stir them around occasionally.
Bring to a boil over high heat. Boil for 20 minutes, drain and set aside.




In medium saucepan, combine 2 cups sugar and 1 cup water.




Put on medium heat and boil for 10 minutes.




Stir in peel, reduce heat and simmer 5 minutes, stirring frequently




Place 1/3 cup of sugar into a seal-able container.




Drain the orange slices from the sugar and water.
Place in with the sugar and toss till all the strips are coated.


Yum!

 Let sit on a tray or wire rack over night to dry.
Store in an air tight container.

Candied Sweet Potatoes

4 pounds sweet potatoes, quartered
1 cups margarine
1 cups brown sugar
3 cups miniature marshmallows, divided
ground cinnamon to taste
ground nutmeg to taste


Preheat oven to 400 degrees F (200 degrees C). (But not now, I'll say when.)
Grease a 9x13 inch baking dish.




Bring a large pot of water to a boil.




Add quartered potatoes and boil until slightly underdone, about 15 minutes.




Drain and let cool.
Preheat oven to  400 degrees F (200 degrees C) now.




Don't fret about peeling them, After par-boiling them the skins will easily pull off. See.




If you are peeling the sweet potatoes and you happen to drop one. The 5 second rule does not apply if your cat runs over, licks the potato and proceeds to bat it around the kitchen floor.
This is a good lesson on letting things go & mopping kitchen floors.




In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg.




Cook, stirring occasionally, until marshmallows are melted.




Stir potatoes into marshmallow sauce.
While stirring mash about half of the potatoes, and break the others into bite-sized chunks.




Transfer to greased baking dish.
Bake in preheated oven for 15 minutes.




Remove from oven and cover top evenly with remaining marshmallows.



Return to oven and bake until marshmallows are golden brown.
Yum!

Tyrande Whisperwind's Ambrosia




TGF: I'd like to thank Priestess Tyrande Whisperwind for meeting with me. I always feel in awe whenever I step foot into the Temple, it is so beautiful here.

Tyrande: It's a please to have you here. You represent our night elves with honor and strength.
The Gamer's Fridge is very popular around here.

Malfurion: The Gamer's Fridge? Are you the one who got Garrosh all up in arms over his lemon squares.
Hahahaha. That made being referred to as "Antler McBeardly face" worth it, I think I could hear his great mother screaming at him from Ogrimmar.

Tyrande: Ahem....Malfurion hasn't eaten much in the last 10,000 years. I'm afraid his knowledge in the kitchen is very limited.

Malfurion: Of course Tyrande is correct. </bows> I am pleased by your presence here and I look forward to sampling you & Tyrande's creations.

TGF: Tell my readers Tyrande, what is your favorite dish?

Tyrande: Ambrosia, It is served at many of our celebrations especially Lunar Festival.

TGF: Awesome, let's get started.

You will need:




1 (12 ounce) container frozen whipped topping, thawed
1/2 cup chopped candied walnuts  (recipe is below.)
1 (8 ounce) can fruit cocktail, drained
2 1/2 cups shredded coconut  (I omitted)
1 (8 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin oranges, drained
3 cups miniature marshmallows
1 (10 ounce) jar maraschino cherries, drained 



I omitted the coconut for personal preference. 




In a large bowl, combine the whipped topping, coconut, chopped nuts, fruit cocktail, pineapple, mandarin oranges, marshmallows, cherries.  




Mix together well and refrigerate for 30 to 45 minutes.


Candied Walnuts

1/2 pound walnut halves
1/2 cup white sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
3 tablespoons milk
1/2 teaspoon vanilla extract




Preheat oven to 350 degrees F (175 degrees C). Spread nuts in a single layer over a baking sheet. 




Roast for approximately 8 to 10 minutes, or until the nuts start to turn brown and the smell of roasting nuts fills the kitchen.



Stir together sugar, cinnamon, salt, and milk in a medium saucepan. Cook over medium-high heat for 8 minutes, or until the mixture reaches the soft ball stage of 236 degrees F (113 degrees C). 




Remove from heat, and stir in vanilla immediately. .




Add walnuts to sugar syrup, and stir to coat well.




Spoon nuts onto waxed paper, and immediately separate nuts with a fork. Cool, and add to ambrosia.
